BBQ Beef Pasta

This One Pot BBQ Beef Pasta is a total weeknight win — made right on the stovetop in about 30 minutes! Ground beef, corn, black beans, and pasta all cook together in a rich, smoky BBQ beef broth. Simple ingredients, big flavor, and a dinner the whole family will happily dig into. And the best part? Fewer dishes to wash at the end of the night 🙌

One of my favorite things about this recipe is how easy it is to customize. Don’t have black beans? Use pinto beans. Want more veggies? Toss in bell peppers or or some frozen mixed vegetables. Like it spicy? Add jalapeños or a splash of hot sauce.
This is one of those meals where you can have fun, swap ingredients, and make it work with what you already have in your kitchen 💜

Ingredients 

  • 1 1/2-2 lb lean ground beef ( i like left overs s I use 2)
  • 1 red bell pepper finely chopped — I use 1 – 2 Tbsp or bell pepper rub if I dont have bell peppers on hand
  • 3 cups beef broth and 2 cups of water ( you can use all beef broth depending on your sodium likes)
  • 3/4 cup bbq sauce (use your favorite we like sweet baby rays regular BBQ sauce)
  • 16 oz of pasta elbow or rotini pasta (dry uncooked pasta)
  • 1-2 cups frozen corn
  • 1 can of black beans drained and rinsed
  • 2-3 cups shredded cheddar or colby jack cheese

Directions:

  • In a 12-inch skillet pan with sides and a lid, over medium-high heat, add ground beef, red bell pepper. Cook and crumble until beef is no longer pink. Drain. If you skipped the bell pepper add the rub now
  • Add the beef broth and 1 cup of water, bbq sauce, dry uncooked pasta, black beans and frozen corn. Stir together making sure that all the noodles are covered in the beef broth. Bring to a boil. Use the other cup of water if needed you may need it later to finish the pasta.
  • Once boiling, cover with lid, and reduce heat to medium-low. Let cook for 20 minutes. Check on and stir half way through to see if more water/broth is needed.
  • Add 1 1/2 – 2 cups of the shredded cheese and stir together until the cheese is melted and combined. Add more broth/water if needed.
  • Taste and add salt if needed.
    • If you are using a low sodium beef broth you may need salt
    • You can also add more BBQ sauce if you want a bit more BBQ flavor.
  • Sprinkle the remaining cheese on top and cover the pan with the lid until the cheese is melted.
