Shortcut Roast Beef & Gravy
over Mashed Potatoes
Prep: 5 minutes | Cook: 10 minutes | Servings: Adjustable
Ingredients
- Deli roast beef
- Brown gravy, packet/jar/homemade
- Mashed potatoes, homemade, refrigerated, instant, or leftover
- Optional: Bread, Texas toast, sourdough, sandwich bread, or rolls
- Optional: frozen green beans, corn, peas, or salad
Directions
1. Warm the gravy in a skillet or saucepan.
2. Add the deli roast beef just long enough to warm through.
3. Be careful not to overheat the roast beef. Deli meat can get tough if it cooks too long.
4. Serve the roast beef and gravy over mashed potatoes.
Melanie’s Mealtime Tip 💜
Deli roast beef makes this recipe easy to adjust. Buy only the amount you need for one or two people, or increase it to feed the whole family.
Make It Your Way
Deli roast beef keeps it super quick, but you can also use ground beef, turkey, chicken, or even frozen meatballs. It is an easy way to turn simple shortcuts into a cozy dinner without starting from scratch.
Ground Beef
Shepherd’s Pie Bowl
Brown 1 lb ground beef, drain if needed, then stir in brown gravy. Add frozen peas, carrots, corn, or mixed veggies if you have them. Serve over mashed potatoes for an easy shepherd’s pie-style dinner without baking it.
Turkey & Gravy Dinner
Use sliced deli turkey or leftover turkey with turkey gravy instead of brown gravy. Serve over mashed potatoes for a quick comfort-food dinner.
Chicken & Gravy
Use shredded chicken or rotisserie chicken with chicken gravy. This is a great way to use leftover chicken and still get that cozy mashed-potato dinner feel.
Meatballs & Gravy
Use frozen meatballs with brown gravy for another easy freezer shortcut. Serve over mashed potatoes or even egg noodles.
Optional Serving Idea
You can also serve this over bread, Texas toast, sourdough, sandwich bread, or rolls for an open-faced roast beef sandwich.
