Rush Hour Chicken Fajitas
Juicy chicken, peppers, onions, bold seasoning, and warm tortillas come together in about 30 minutes with very little hands-on cooking.

Ingredients
- 2 medium bell peppers, any color combination
- 2 medium onions
- 2 garlic cloves
- 1½ lbs boneless skinless chicken breasts
- 2 tbsp Chipotle Rub or Southwestern Seasoning Mix
- 12 small flour tortillas
- 1½ cups shredded cheddar cheese
- ½ cup sour cream, optional
- ½ cup prepared salsa
Directions
- Slice the peppers and onions and mince or slice the garlic. Place the vegetables in a Deep Covered Baker or another suitable covered microwave-safe dish.
- Coat the chicken with the seasoning and place it over the vegetables.
- Microwave covered on HIGH for 12–15 minutes, or until the chicken reaches 165°F in the thickest part.
- Cut the cooked chicken into small pieces and stir it into the peppers and onions.
- Warm the tortillas for about 30 seconds.
- Fill tortillas with the chicken and vegetables and serve with cheese, sour cream, salsa, or your favorite fajita toppings.
