Ingredients

  • 2 medium bell peppers, any color combination
  • 2 medium onions
  • 2 garlic cloves
  • 1½ lbs boneless skinless chicken breasts
  • 2 tbsp Chipotle Rub or Southwestern Seasoning Mix
  • 12 small flour tortillas
  • 1½ cups shredded cheddar cheese
  • ½ cup sour cream, optional
  • ½ cup prepared salsa

Directions

  1. Slice the peppers and onions and mince or slice the garlic. Place the vegetables in a Deep Covered Baker or another suitable covered microwave-safe dish.
  2. Coat the chicken with the seasoning and place it over the vegetables.
  3. Microwave covered on HIGH for 12–15 minutes, or until the chicken reaches 165°F in the thickest part.
  4. Cut the cooked chicken into small pieces and stir it into the peppers and onions.
  5. Warm the tortillas for about 30 seconds.
  6. Fill tortillas with the chicken and vegetables and serve with cheese, sour cream, salsa, or your favorite fajita toppings.

Melanie’s Make-It-Easier Tip 💜

Use the tools that cut the annoying prep steps: a Garlic Press for the garlic, Salad Choppers to cut the cooked chicken right in the dish, and a Tortilla Warmer to get all the tortillas warm at once.

Frozen sliced peppers and onions can make this even faster when chopping is the step standing between you and dinner.
