Air Fryer Chicken Fajita Quesadillas
Cooked chicken, peppers, onions, cheese, and tortillas turn into a crispy, customizable dinner without heating up the kitchen.

Ingredients
- 2 cups cooked chicken, shredded or chopped
- 1 bell pepper, sliced or diced
- ¼ cup onion, sliced or diced
- 1–2 tsp taco seasoning, fajita seasoning, Everything Taco Seasoning, or Southwestern Seasoning Mix
- 1 cup Colby Jack, Mexican blend, or your favorite cheese — for the best melt, grate it fresh from a block with the Adjustable Coarse Grater
- 4 medium flour tortillas
- 1 tsp oil, optional
- Salsa, sour cream, guacamole, or ranch for serving
Directions
- Mix chicken, bell pepper, onion, and seasoning. Add a drizzle of oil or spoonful of salsa if needed.
- Sprinkle freshly grated cheese on one half of each tortilla.
- Add the chicken mixture and a little more cheese.
- Fold the tortillas in half.
- Air fry in a single layer at 370°F for 4–5 minutes.
- Flip and cook another 3–4 minutes, until crisp and melted.
- Cool briefly, slice, and serve.

If your family prefers softer peppers and onions, soften them in the microwave or air fryer for a few minutes before adding them.

- No chicken? Use leftover steak, taco meat, or black beans.
- Skip the peppers and onions for simple chicken-and-cheese quesadillas.
- Serve with fruit, chips and salsa, or a simple salad if you want a fuller meal.
