Shortcut Roast Beef & Gravy over Mashed Potatoes

Ingredients:

  • Deli roast beef
  • Brown gravy, packet/jar/homemade
  • Mashed potatoes, homemade, refrigerated, instant, or leftover
  • Optional: Bread, Texas toast, sourdough, sandwich bread, or rolls
  • Optional: frozen green beans, corn, peas, or salad

Directions:

  • Warm the gravy in a skillet or saucepan.
  • Add the deli roast beef just long enough to warm through.
  • Be careful not to overheat the roast beef. Deli meat can get tough if it cooks too long.
  • Serve the roast beef and gravy over mashed potatoes.

Optional Serving Idea

You can also serve this over bread, Texas toast, sourdough, sandwich bread, or rolls for an open-faced roast beef sandwich.
