Chicken & Stuffing Casserole

Tender chicken, vegetables, creamy sauce and a golden stuffing topping—comfort food without complicated prep.

Some nights call for a warm, filling dinner that doesn’t require a ton of work. This casserole keeps things simple: you don’t even have to precook the chicken. Frozen peas and carrots skip the chopping, and a boxed stuffing mix makes an easy topping. That’s my kind of weeknight shortcut!

Why This Recipe Works

  • No precooking the chicken: It bakes right in the creamy filling.
  • Frozen vegetables: No extra chopping or prep.
  • Stuffing mix shortcut: A savory, golden topping without making bread stuffing from scratch.
  • One baking pan: A hearty dinner with less cleanup.

Chicken & Stuffing Casserole

Prep: About 10 minutes  â€¢  Bake: 60 minutes  â€¢  Total: About 70 minutes  â€¢  Oven: 400°F

Ingredients

  • 4 oz. cream cheese
  • ½ cup sour cream
  • 2 tbsp cornstarch
  • 2 tsp Rotisserie Seasoning
  • 4 cups chicken broth, divided
  • 2 lbs. boneless, skinless chicken thighs, cut into chunks
  • 1 bag (12 oz.) frozen peas and carrots
  • ½ cup (1 stick) butter, diced
  • 2 boxes (6 oz. each) stuffing mix, any flavor

Directions

  1. Preheat oven to 400°F. Microwave cream cheese in a large bowl for 30–45 seconds, until very soft. Stir in sour cream, cornstarch and Rotisserie Seasoning. Slowly whisk in 1 cup of broth. Pour into a 9" x 13" Brilliance Nonstick Baking Pan.
  2. Add chicken and frozen vegetables to the pan. Stir to combine. Bake uncovered for 45 minutes.
  3. Combine the remaining 3 cups broth, diced butter and stuffing mix in a large microwave-safe bowl. Microwave 5–6 minutes, until the liquid is absorbed. Fluff with a fork.
  4. Gently stir the casserole, spread the stuffing evenly over the top and bake 15 more minutes, until lightly browned and bubbling. Check that the chicken reaches 165°F internally.
  5. Let rest briefly before serving.

Melanie’s Mealtime Tip 💜

Prep the chicken ahead: Cut it into chunks earlier in the day, refrigerate, and you’ve got one less task at dinner time.

Keep those frozen veggies frozen: Add them straight to the pan—no thawing needed.

Stuffing is flexible: Chicken, turkey or classic seasoned stuffing can all work here.

Tools That Make It Easier

9" x 13" Brilliance Nonstick Baking Pan

Plenty of room for chicken, vegetables, creamy filling and the stuffing topping—with a nonstick surface that helps with cleanup.

Rotisserie Seasoning

All that savory flavor without pulling out a bunch of separate spices.
