Mealtime with Melanie Live

Ravioli Lasagna Two Ways

Frozen ravioli, sauce, spinach, and cheese become a family-size dinner or individual portions. Pick the version that fits your night.

Family-size ravioli lasagna baked in a rectangular stone baker with melted mozzarella cheese on top

Family-size dinner

Layer it in the 9 × 13 Fully Glazed Rectangular Baker.

Individual ravioli lasagna squares baked in the Pampered Chef Brownie Pan

Individual portions

Make little ravioli lasagnas in the Brownie Pan for smaller households, lunches, or game day.

The shortcut

Lasagna flavor without boiling noodles

Start with frozen ravioli

I use meat and cheese ravioli. The filling is already in the pasta, so you can build the layers without boiling traditional lasagna noodles.

Get the water out of the spinach

Thaw frozen spinach and use the Salad & Berry Spinner to remove extra liquid before adding it to either version.

Make it your way

How I Build Both Versions

9 × 13 Rectangular Baker

  1. Spread pasta sauce across the bottom of the baker. Jarred, canned, or homemade sauce all work.
  2. Add a layer of frozen meat and cheese ravioli.
  3. Portion drained spinach with the Medium Scoop and spread it out. Add Parmesan and mozzarella.
  4. Repeat the sauce and ravioli layers. I skip spinach in the second layer, then finish with more cheese.
  5. The recipe method is 400°F for about 60 minutes. For my faster busy-night version, I check at 450°F after about 30 minutes and add 5–10 minutes if needed. Make sure the center is heated through and the cheese is melted and bubbly.

Brownie Pan Portions

  1. Drain the thawed spinach well, then mix it with the cheese in a bowl.
  2. In each well, add 1 tablespoon of sauce, one ravioli, some spinach-cheese mixture, and another ravioli.
  3. Top each with another tablespoon of sauce and cheese.
  4. Bake at 350°F for about 20–22 minutes, until heated through and the cheese is melted.

Individual portions take more time to assemble, but less time in the oven.

The two pans use different oven temperatures. In the Live, I assemble the Brownie Pan while the family-size baker cooks and show a second Brownie Pan that I baked ahead.
