Easy Banana Muffins
Sometimes you just need a small batch of muffins without ending up with two dozen sitting on the counter. These easy banana muffins make just six and use simple ingredients you may already have on hand.
They are made with whole wheat flour and old-fashioned oats, and you can use either ripe banana or unsweetened applesauce. I actually prefer the applesauce version in this recipe, so use whichever you have. 💜

Easy Banana Muffins
Ingredients
- ½ cup whole wheat flour
- ½ cup old-fashioned oats (not quick-cooking or instant)
- 1 tsp vanilla
- 1 cup ripe banana, mashed, or 1 cup unsweetened applesauce
- ½ tsp baking soda
- ½ tsp sea salt
- 3 tbsp brown sugar
- 1 large egg
- ¼ cup coconut oil, plus extra for greasing the pan (measure solid, then melt for the recipe)
Directions
- Preheat the oven to 350°F.
- Add the banana or applesauce to a mixing bowl. If using banana, mash it until the chunks are small.
- Add the remaining ingredients and stir until everything is mixed well.
- Lightly grease 6 wells of a muffin pan or use muffin liners.
- Use a large scoop to divide the batter evenly between the 6 muffin wells.
- Bake for 30 minutes.
- Let the muffins cool completely before storing.
- Store in an airtight container.

Banana or applesauce?
Both work, but I actually prefer the unsweetened applesauce in this recipe. It is also a handy option when you want to make muffins but do not have ripe bananas waiting on the counter.
Measure the coconut oil first.
Measure the ¼ cup while the coconut oil is solid, then melt it before mixing it into the batter.
Only making six?
You only need to fill six muffin wells. If you are using a larger pan, leave the remaining wells empty.
Easy Breakfast Without Overthinking It
These are the kind of muffins I like for real life: simple, not fussy, and easy to make in a small batch. Pair one with fruit, yogurt, or whatever else works for your morning—or just grab one when you need a quick snack.
