Quick family dinner

Easy Sloppy Joes

Ground beef, peppers, onions, and a simple homemade sauce make an easy dinner that feels a little more homemade without getting complicated.

If you already have peppers and onions prepped from another meal, this is an especially easy way to use them. Frozen peppers and onions work too.

Ingredients

  • 1 lb ground beef
  • ½ cup diced onion
  • ½ cup diced bell pepper
  • ½ cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 1 tbsp yellow mustard
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • 4–6 hamburger buns

Directions

  1. Brown the ground beef in a large skillet over medium heat.
  2. Add onion and bell pepper and cook until softened.
  3. Drain extra grease if needed.
  4. Stir in ketchup, Worcestershire sauce, brown sugar, mustard, garlic powder, salt, and pepper.
  5. Simmer 5–10 minutes, stirring occasionally.
  6. Spoon onto buns and serve warm.

Melanie’s Mealtime Tip 💜

Prep once, use twice. When you are already chopping peppers and onions for another meal, make extra and keep them in the fridge for sloppy joes, omelets, quesadillas, wraps, or sausage and peppers.

Easy Swaps

Sweeter

Add another teaspoon of brown sugar.

Tangier

Add another splash of Worcestershire sauce or mustard.

No buns?

Serve the mixture over baked potatoes, rice, fries, or tortilla chips.

Stretch it

Add drained black beans or pinto beans to the meat mixture.

Easy Sides

Potato chips are my favorite because dinner stays easy. Pickles, fruit, salad, coleslaw, veggie sticks, corn, tater tots, or fries all work too.
