Breakfast-for-Dinner Scramble Bowls
When dinner plans fall apart, eggs, potatoes, cheese, and a few odds and ends from the fridge can still turn into a filling meal in about 30 minutes or less.
This is less of a strict recipe and more of an easy dinner formula—perfect for picky eaters, smaller households, or nights when you do not want to overthink dinner.
Build Your Scramble Bowl
Start with
- Eggs
- Frozen hash browns, frozen diced potatoes, leftover potatoes, toast, or tortillas
- Shredded cheese
Add what you have
- Cooked bacon, sausage, ham, deli meat, or leftover meat
- Bell peppers, onions, spinach, mushrooms, tomatoes, or leftover vegetables
- Salsa, hot sauce, ketchup, gravy, sour cream, or green onions
Directions
- Cook your potatoes according to package directions, or reheat leftover potatoes.
- Scramble the eggs in a skillet and add cheese near the end so it melts into the eggs.
- Add any cooked meat or vegetables you want to use.
- Build your bowl with potatoes on the bottom, scrambled eggs on top, and your favorite toppings.
- Serve with fruit, toast, or another simple side if you want one.

Meat Lover’s Bowl

Use peppers, onions, mushrooms, spinach, tomatoes, or leftover veggies.

Have leftover mashed potatoes?
Mix cold mashed potatoes with an egg, a little flour or breadcrumbs, and shredded cheese if you have it. Form into patties and pan-fry in butter or oil until golden on both sides.
