This cheesy taco rice skillet comes together with simple ingredients, minimal prep, and it is easily customizable so everyone actually eats it (no complaints π)

Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup rice (uncooked)
- 2 cups beef broth
- 1 cup corn (canned & drained OR frozen)
- 1 can black beans, drained & rinsed
- 1 can diced tomatoes drained (plain or fire-roasted)
- 1 cup shredded cheese
Optional Toppings (highly recommended π)
- Diced avocado or guacamole
- Salsa
- Sour cream
- Fresh cilantro
- JalapeΓ±os (if you like a little heat)
- Crushed tortilla chips for that extra crunch π
Directions
- Brown ground beef in a large skillet over medium heat.
- Add taco seasoning and stir to combine.
- Stir in rice, beef broth, corn, and black beans.
- Bring to a boil, then reduce heat, cover, and simmer 15β20 minutes (until rice is tender).
- Sprinkle cheese on top, cover for a few minutes until melted.

- Use microwave rice for a quick shortcut β or swap in leftover cooked rice to cut the cook time even more (just reduce the broth by 1/2 cup)
- Swap ground beef for turkey or chicken
- Add diced peppers/onions (or use frozen π)
