Cozy Chicken & Rice Skillet

This is one of those dinners you make when you need something warm, filling, and nobody has opinions about it. Simple ingredients, creamy comfort, and a great way to use up leftovers from the week 💜

Ingrediants

  • 2 cans of cream of chicken soup
  • 3/4 cup milk
  • 1 -1 1/2 cups frozen mixed vegetables or any frozen vegetable of your choice
  • 2 cups cooked rice
  • 4 cooked chicken legs (meat off the bone)

Directions

  • Add soup to a 12 inch skillet on med heat
  • Add milk and stir (start with about 1/2 cup and you can add more as needed)
  • Add frozen vegetables let cook for about 2-3 minutes to get the vegetables thawed
  • add cooked rice and chicken
  • stir and heat thoroughly

You can also serve over additional rice, toast or biscuits

🍽 Use What You Have

  • Swap white rice for brown rice
  • Use left over veggies from the week instead of frozen
  • Use high-protein milk in place of regular
  • Add extra veggies for more color + fiber
