My Spring shortcuts to make weeknight dinners easier

This is a great recipe any time of year you are craving some comfort food. It is a great way to use up that left over ham after the Christmas or Easter holidays.

Ingredients:

  • 1 pound Great Northern Beans (you can sub beans of your choice)
  • 1 ham bone with trimmings you can also add some additional left over ham
  • 8 cups of water
  • 1 teaspoon garlic and herb
    • measure with your heart
  • 1 teaspoon three onion rub
    • measure with your heart
  • Salt and pepper to taste

Directions:

  • Rinse beans per package directions
  • Add water, beans, ham bone, and seasonings to a large dutch oven / 5-8qt pot
  • bring to a boil
  • lower heat to a simmer and cover to for 2-3 hours
  • pull the ham bone and set aside to cool and allow the soup to continue to simmer (if it needs more water add a bit more)
  • add any extra ham you have cubed or chopped up
  • once the ham bone has cooled remove the ham and add back into the pot and discard the bone
  • Cook on low an additional 2-4 hours stiring and tasting occasionally
  • add any additional seasonings you desire
  • you can add more water to make a thinner consistency

Serve with a side of corn bread, biscuits or you can serve over rice

Note: Want to save some time? Use a pressure cooker to start the beans and then you can pour the beans and the liquid in the dutch oven and continue with the recipe.

TIP: Double the recipe and freeze in individual servings for a quick lunch or dinner
